What are the differences between Greek olives and Spanish olives?
Our Greek green olives are typically available in larger calibers and are hand-stuffed, ensuring higher quality and attention to detail. Kalamata olives are available from April onwards, as they require a natural fermentation period after harvest to develop their characteristic flavor and texture.

About 80% of Greek olive oil is extra virgin, which is especially valued for its high polyphenol content, natural antioxidants linked to strong health benefits. This is largely due to the Koroneiki olive variety, which is naturally rich in these compounds.
Combined with early harvesting and careful cold extraction, Greek olive oil retains more of its polyphenols, resulting in a more intense flavor, with a characteristic bitterness and a peppery finish, as well as superior nutritional value.
